This is awesome. I made it for the first time last year for Thanksgiving. (Thanks to my co-worker Jackie from 100.3 The Peak for the idea... i made a couple of changes to her ingredients).
Here is how to make it.
- 1 box Jiffy cornbread mix
- 1 medium onion, chopped
- 1 cup green chili
- 1 egg
- 2 cans corn (drained)
- 1 can creamed corn
- 1.5 cups shredded mild cheddar cheese
- 1 stick salted butter (softened)
- 1 bell pepper chopped (optional)
Mix all ingredients together. Place in a 9x13 glass pan sprayed well with cooking spray. Cook at 350 for 40 mins or until golden brown on the top.
